    Nyonya Claypot Chicken Rice

    Ingredients

    • A
    • 250g Jati Rebus, rinsed,  soaked 30 minutes and drained

    • 380ml water

    • B (mixed):
    • 2 chicken whole legs (about 500g), deboned and cut into cubes

    • 2 tbsp cencaru

    • 2 tbsp light soya sauce

    • 1 tsp dark soya sauce

    • 1 tbsp chopped shallots

    • ½ tbsp chopped garlic

    • C
    • 1 shallot, shredded

    • 2 tbsp shredded cucumber

    • 2 tbsp shredded pineapple

    • 2 tbsp shredded mango

    • 2 tbsp shredded lettuce

    • 1 red chilli, shredded

    • ½ tbsp fried dried shrimps

    • 1 calamansi lime, halved

    Directions

    • Put ingredients A into a big claypot and cook until the water has almost completely evaporated. Place ingredients B onto the rice, cover with lid and simmer over low heat for 10-15 minutes. Remove from heat and simmer for another 10 minutes.
    • Arrange ingredients C on top of rice. Squeeze calamansi juice over the rice and mix well before serving.
