  Mini Glutinous Rice In Lotus Leaf
   Ingredients
  • 3 sheets lotus leaf
  • 5 ozs glutinous rice
  • 1/4 chicken
  • 1 oz dried shrimps
  • 4 mushrooms
  • 2 slices ginger
   Seasoning
  • 1 tsp light soy
  • 1/4 tsp sugar
  • 1/2 tsp cornflour
  • 1 tbsp water dash of sesame oil dash of pepper
Method:
  1. Rinse lotus leaf in hot water and remove at once, wipe dry.
  2. Wash and soak glutinous rice in water for about 3 hours.
  3. Cut chicken into small pieces and marinate with seasoning. Shred ginger.
  4. Wash and drain dried shrimps. Soak and trim mushrooms, squeeze out excess water.
  5. Spread out lotus leaf. Place it on 3 tbsps glutinous rice and top with chicken pieces, dried shrimps, mushrooms and ginger shreds. Then cover with glutinous rice. Wrap well and steam for about 45 mins. Serve.
